DESCRIPTION
Appellation : AOC MINERVOIS ROUGE
Site : Situated in the heart of the Minervois between Carcassonne and Narbonne.
Soil : Quaternary terraces made up of a variety of stones and pebbles on clays.s.
Grapes : 90% Syrah, 20% Grenache
Harvest : 25 hl/ha
Age of the parcel : 45 years
Viticulture : Certified Organic ECOCERT
Vinification : Hand picked with double sorting, complete and selective de-stemming, vinification by pigeage of about fifteen days of maceration ensuring maximum extraction of tannins and colour. Once the malolactic fermentation has been completed, half of the harvest is aged in 228 l Burgundian oak barrels, the other half kept in tanks. They are then blended and put into tanks at least 12 months after the harvest without filtration and without fining. Once bottled, the wines rest 4 months in our cellars before being released.
Ageability : Our red Minervois can be appreciated from its second year with a dominance of red fruits. It reaches excellent drinkability between the 4th to 8th year, but it can be kept for 10 years or more depending on the vintage and conditions of conservation.
