Appellation : AOC Minervois
Site : Situated in the heart of the Minervois between Carcassonne and Narbonne.
Soil : Quaternary terraces made up of a variety of stones and pebbles on clays.
Grapes : 85 % Grenache, 15% Syrah
Harvest : 40 hl/ha
Viticulture : Certified Organic ECOCERT
Vinification : Complete de-stemming, followed by a 15-day fermentation under controlled temperature. After malolactic fermentation, the wine is aged in our cellars for 6 months in concrete tanks, followed by bottling. Once bottled, the wines age in our cellars before being released.
Consummation : Our red Minervois can be appreciated from its first year by its charming, elegant and fruity side with a dominant of red fruits.
